I think we've already established that I'm lazy in the kitchen. If it'll take me more than ten minutes or more than a handful of ingredients - I'm out. So this is my go-to tofu recipe. It's easy and yummy and will stay good in the fridge for a while. I toss it in salads, sandwiches, or just eat it as a snack when I need to grab something fast. Which is always. Andrea's Lazy Tofu 1 package tofu (14oz) Soy Sauce Rice Vinegar 1 tsp. Minced Ginger 1 tsp. Minced Garlic 1. Press the tofu. Do this by wrapping the block in a kitchen towel and putting something heavy on top of it until all the water is squeezed out. I use a plate with a bunch of cans of beans on it.
2. Cut the tofu into strips or cubes, whichever you want. 3. In a shallow tupperware, pour soy sauce and rice vinegar to cover the bottom. Mix in ginger and garlic. 4. Lay the tofu in mixture and then ten minutes later flip to the other side for another ten. When I have the time, I actually let it sit for twenty minutes on each side in the fridge. 5. Set oven to 350. 6. Spray a baking sheet lightly with coconut oil spray. Place tofu on sheet. Bake for 25 minutes on one side. Flip and bake for 25 minutes on the other. My boyfriend is not vegan (I'm working on it) but as an added benefit of being with me, he's learned to cook vegan! Today's contributing recipe is Andrea's Boyfriend's Lazy Stir Fry 1/2 Yellow Squash, Sliced 1/2 Zucchini, Sliced 1 Cup Broccoli, Chopped 1 Cup Cauliflower, Chopped 1 Carrot, Sliced 1 Cup Kale, Torn Into Pieces 1 Cup Quinoa 1 Pack (14 oz.) Extra Firm Tofu Soy Sauce Rice Vinegar Minced Ginger Minced Garlic All Purpose Flour (I use Gluten Free) Coconut Oil Spray Salt/Pepper 1. Squeeze water out of tofu and press it by wrapping it in paper towels and putting heavy stuff on top of it to squeeze out all the water.
2. In a shallow dish, put in enough soy sauce to have a bottom layer. Mix in rice vinegar, a bit of ginger (I use a lot because I like it), and a bit of garlic. 3. Slice the tofu into 1/4 inch slices and place them in the dish to start marinating. 4. Spray a large pan with coconut oil and add in veggies (except kale). Leave them for about five minutes to start softening. Move them around a bit so nothing burns. 5. Turn over the tofu in the dish to marinate the other side. 6. In a separate pot, start making the quinoa. Or, do as I do and buy the microwaveable kind in a bag. Microwave now. 7. Toss the kale in with the other veggies. 8. Put the flour onto a plate and then place the tofu in it, on both sides. Make sure it's well covered in flour. 8. Move veggies to one side of the pan and on the other, throw the tofu on. Turn on each side to brown each side. This could take ten minutes so it firms a bit. 9. Put everything together in a bowl and enjoy! Add soy sauce to taste. Or, do as the bf does and top the tofu with crushed basil, rosemary, and black pepper. But do you care about the earth? Do you care about being lied to? Every morning, I walk three miles to spend an hour in yoga dripping sweat and feeling my muscles grow. Adel Salad 1 Medium Tomato, Chopped 1 Head of Romaine, Chopped 7-8 Black Olives, Sliced 1/4 Cucumber, Chopped 1 Handful Mozarella Daiya Cheese 1-2 Tbsp. Go Veg Parmesan Cheese 1/2 - 1 Cup Brown Rice Penne 6 Strips Beyond Meat Chicken This has been my go to salad for over ten years. It was named "Adel" salad by all of my friends who would ask me how to make it or ask me to make it for them. It's super easy and fast...because I don't do it any other way. 1. Boil water and put penne in.
2. While penne is cooking, chop all the rest of the ingredients (except cheese and chicken) 3. Put chicken on a pan and warm until each side is a bit brown. This is like two minutes on each side. 4. Strain penne and run with cold water to cool it down. 5. Put everything into a bowl, add in the Daiya, and top with the veg parmesan. 6. Mix with your favorite dressing. Or my lazy dressing. |
